dusk patrol

After a few days on the MTB in St George I was excited to get back on the boards, after all it is only January.
The new snow refreshed my Freeze Creek run so I burned a lap just before dark.


Cutting trail was soft, no pics of the DH but you can imagine..... face shots!
I am feeling generous tonight after enjoying a warm bowl of Rosie's top secret Mulligatawny soup. You know the one that Elaine Benes got a hold of from the soup Nazi. I am going to share the recipe for this curried treasure with you!
2 Tablespoons olive oil
1 onion chopped
2 carrots chopped
1 celery stalk chopped
1 green pepper, chopped
1 apple, cored, peeled, and chopped
1 1/2 lbs boneless, skinless chicken breast, chopped. Vegetarians can replace with firm tofu.
1/2 cup flour
2 to 3 tablespoons curry powder
5 cups chicken broth
1 can diced tomatoes, drained
Salt and pepper to taste
2 cups hot cooked rice
-Saute' vegetables, apple, and chicken in olive oil for 15 Min's
-Mix flour and curry powder and add to the pot and stir and cook for 3-5 min.
-Add chicken broth and tomatoes to the pot and simmer for 1 hour, stirring occasionally.
-Add salt and pepper to taste
-To serve place 1/4 cup of rice in bowl and ladle soup over rice..
Makes about 8 cups
Possible my new favorite!
